Bf went for a drink/organizing event stuff, so I am alone at home and decided to cook a nice big pot of Chili. Chili can be stored in the freezer for many months so I don't mind la. I can't believe how easy it is to make it.
Ingredients:
1 can Plum Tomatoes (or crush Tomatoes)
1 can Chick Peas
1 can Kidney Beans
2 med Onions
1.5 pd minced Pork
2 gloves Garlic (sliced them into pieces)
Salt, Pepper, Chili Powder, chili flakes, dry oregano, dry bay leaf, dry parsley
Instructions:
1. Turn heat, Add oil to pan when hot
2. Add Garlic, don't burn them
3. Add Pork, cook till almost done (no Pink)
4. Add Chickpeas, Kidney Beans, Tomatoes (straight from the can - don't rinse)
5. Add dry ingredients
6. Turn heat down and let it simmer
That's it! So Simple - I added some Cheddar Cheese on the top so it'll melt nicely into the chili after stiring it a bit. A great meal to feed a hangover too :P
