I was extra happy this weekend because I got Friday off so made it a long weekend to spend time with my boy : )
This weekend I was very productive. Here's what I did:
- Made 2 pizza from scratch: Smoked-salmon and a Meat Lover
- Built a bedside table
- Cooked a 3lb Roast
- Made a dozen Strawberry Cream Cheese Muffin
This is the dough, waiting to be risen (So Easter appropriate!)
And the end product is with many layers of gooey choeese : ) The reason why I did all this work was because our good friend Mr. A was throwing his 'almost' annual Oyster Potluck party, and our contributing dish was pizza. Take a look at this delicious oysters. It took about an hour to shuck these little suckers but they were very meaty and 'clean'. They were so 'high-class' that it even came in their own wooden travelling box!My Bedside Table from Ikea
This looks small but took me 1 1/2 hr to put this together. For $50 cdn - it was cheaper than anything else we've seen around town. The bonus part is we love the colour and the drawers! The one down side to this is that we have to return the second one because the box and a piece of wood is dented : ( Back to Ikea this week for exchange and getting more stuff from there. I love Ikea!
Food - Yummy Yummy!!!!!
The Roast was super easy! Salt, Pepper and stuffed with Garlic. Because we prefer Medium rare for our beef, so the total cooking time was 1 hr at 350 degree. Generally the trick is 20 minutes per lb (or 25 minutes if the roast is straight out from the fridge).
The muffin were divine! I am not a baker but after looking over a recipe online from lulu and realizing I have all the ingredients at home (Strawberry + cream cheese). I just couldn't resist tempting the idea of making muffin for my boy.

I had some extra ingredients so I made a pie instead. haha.. it also turned out really well too!
Overall I had a fabulous weekend and looking forward to our next one : )
